The beer machine is pre programmed to read the qr code and know if it was generated by the payment node. It does not have to connect to the payment node at this time to know, its just done using mathematical proofs. In this case it's called deterministic. Like how you can sign a message in bitcoin to prove you are the owner of an address, without having to give your private key. The machine is smart enough and probably holds a unique secret to know if the qr code is legit. In the beers case, if the qr code is legit, it releases the beer.
